The House of ChocoDew

A house built on patience, not scale.

In 1994 our grandfather swapped a share of the family's wheat land for eleven sacks of green coffee from Coorg. He roasted them over a wood fire in a brick courtyard off Lawrence Road, Amritsar, and sold them by estate name — never by weight.

Three decades later the courtyard is a roastery and the family is a tasting panel. Every blend is cupped eleven times before it earns a label; fewer than one in twenty lots we taste ever reaches this page.

1,340m in Coorg. Shade-grown under silver oak and pepper vine. Nine families, one cooperative.

Harvest

Selective picking, eleven passes a season. Only cherry at 22° brix leaves the hill.

Eighteen days on raised beds, turned by hand every ninety minutes.

6kg batches in Amritsar. Profiles written by ear and nose, never by preset.

Blind scored by four palates. Below 87 points, the lot never ships.

Nine days of rain in the middle of picking. Ravi moved the whole lot to raised beds at midnight and we ended up with the sweetest naturals we've cupped in four years. The recipe below is how we're brewing it at the roastery this week.
